State Fair Cream Puffs' Dirty Secret

The Wisconsin State Fair doesn't open until August 1st, but we're learning something disturbing about one the bigger attractions to the annual gathering in West Allis.

The cream puff is a rite of passage for many Wisconsinites, and is often the only time a person (like me) will indulge in the popular pastry.

But WBAY-TV has unmasked the dirty, little secret that's inside this year's line of cream puffs.

The whipped cream will come from Illinois.

I'll give you a minute to pick your jaw up from the floor....

According to the story, the whipped cream filling had been made for the past 80 years (give or take) at the Golden Guernsey dairy farm in Waukesha. The farm shut down last December.

So as a replacement, the Wisconsin Bakers Association found Illinois-based Prairie Farms to handle filling all those puffs for this summer.

"We talked to a lot of different Wisconsin dairies and part of the problem is that large volume of cream that we pull during the State Fair is a lot for someone to handle," Wisconsin Bakers Association CEO David Schmidt said.

According to Schmidt, Prairie Farms receives their milk from 44 Wisconsin counties and currently provides more than 90 percent of the milk served in Madison and Milwaukee schools. 

Apparently this "trucking in milk" from outside the Badger State isn't anything new. That point is echoed by the Wisconsin Milk Marketing Board, which says a lot of the milk people in Wisconsin drink come from outside the state. Nearly 90 percent of the milk produced in the Dairy State is used to make cheese.
