I use a Weber charcoal grill exclusively. I don't even own a gas grill. So here's a "cheat" way to do ribs on the grill. It's not officially smoking them, but it gets the job done and they come out great. This guy keeps the temp a bit high....it's better at 225 or so, but it'll work. Also, remember toIf you are indirect smoking (as done here) you need to place vent opposite your heat/smoke source. This allows the smoke to be pulled across the meat and gives a great smoke flavor.
