It’s getting HOT again! Here’s a great way to cool off. I found this delicious treat last month from Southern Living (July 2013).
Add the following ingredients to your shopping list:
8 cups cubed honeydew melon
1 1/2 cups loosely packed fresh mint leaves
1 1/2 cups simple syrup
4 1/2 teaspoons fresh lemon juice
Pinch of salt
Bourbon or rum (optional)
For preparation, stir the first 5 ingredients together, then process 2 batches in your blender or food processor until smooth. Next, pour the mixture into the freezer container of a 1-gallon electric ice-cream maker, and freeze according to the manufacturer's instructions. Please note: Instruction and times will vary.
If you’d like, drizzle with bourbon or rum just before serving.
